Ingredients

Scale
  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 8 ounces cream cheese, softened to room temperature
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 large round loaf of bread (about 1.5 pounds)
  • 2 tablespoons melted butter
  • 1/2 cup sour cream (for the spider web design)
  • 1 small black olive, sliced (for the spider, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Let cream cheese sit at room temperature to soften.
  2. Thaw frozen spinach according to package directions. Squeeze dry using a kitchen towel to remove as much water as possible.
  3. In a large mixing bowl, combine softened cream cheese, 1 cup sour cream, and mayonnaise. Beat with a hand mixer until smooth and creamy, about 2 minutes.
  4. Stir in minced garlic, onion powder, black pepper, salt, and red pepper flakes (if using). Mix until evenly distributed.
  5. Fold in shredded mozzarella, grated Parmesan, and squeezed-dry spinach until well combined.
  6. Using a sharp serrated knife, cut a circle about 2 inches from the edge of the bread loaf at an angle to create a lid. Hollow out the inside, leaving a 1-inch thick wall. Save the pulled-out bread pieces for dipping.
  7. Brush the inside of the bread bowl and the cut side of the lid with melted butter.
  8. Spoon the spinach dip mixture into the hollowed-out bread bowl. Place on a baking sheet and bake for 25-30 minutes, until hot and bubbly and the bread is golden brown. Tent with foil if browning too quickly.
  9. While baking, prepare the spider web: spoon 1/2 cup sour cream into a piping bag or zip-top bag with a small corner snipped off.
  10. Let the dip cool for 5 minutes after baking. Pipe a circle of sour cream in the center, then concentric circles outward. Use a toothpick to drag lines from the center outward through all circles to create a web effect. Wipe the toothpick clean between each drag.
  11. Arrange sliced black olive pieces on top to create a spider (optional).
  12. Serve immediately with reserved bread pieces, crackers, and vegetable sticks.

Notes

Squeeze spinach thoroughly to prevent watery dip. Let cream cheese come to room temperature for smooth texture. Use a serrated knife for cutting the bread bowl. Toast reserved bread pieces for extra crunch. Can prepare dip mixture up to 2 days in advance.
