  • 2 tbsp all-purpose flour
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper (optional)
  • 1 large bag (1316 oz) tortilla chips
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup sliced jalapeños
  • 1/2 cup sliced black olives
  • 1/2 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/2 cup guacamole
  • 1/4 cup sliced green onions

Instructions

  1. Prep the pork (5 minutes): Pat the pork shoulder dry with paper towels. In a small bowl, mix the smoked paprika, garlic powder, onion powder, brown sugar, cumin, chili powder, salt, and pepper. Rub the spice mixture all over the pork, making sure to coat every surface.
  2. Sear the pork (10 minutes): Heat the olive oil in a large skillet over medium-high heat. Sear the pork on all sides until deeply browned, about 3-4 minutes per side.
