Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, sugar, and salt. Pour in melted butter and stir with a fork until the mixture looks like wet sand. Press firmly into the bottom of a parchment-lined 9×9-inch pan. Refrigerate for about 10 minutes.
  2. Make the cheesecake filling: In a large bowl, beat softened cream cheese with an electric mixer until smooth and fluffy (about 2 minutes). Add Greek yogurt, powdered sugar, vanilla extract, and lemon juice. Beat on medium speed until combined and creamy. Spread evenly over the chilled crust. Return to fridge.
  3. Cook the apples: In a medium skillet over medium heat, melt 2 tablespoons butter. Add diced apples, brown sugar, cinnamon, nutmeg, and a pinch of salt. Cook for 5-7 minutes, stirring occasionally, until apples are tender but not mushy. Remove from heat and let cool for 5 minutes.
  4. Make the caramel sauce: In a small saucepan over medium heat, melt ยผ cup butter. Add brown sugar and cream, whisking constantly. Bring to a gentle boil, then reduce heat to low.
