  • 8 ounces cream cheese, softened to room temperature
  • 1/4 cup sour cream
  • 2 cups shredded cheddar cheese (sharp cheddar recommended)
  • 1 cup shredded Monterey Jack cheese
  • 1 large bag (9.75 ounces) Fritos original corn chips
  • Optional toppings: sliced jalapeños, diced tomatoes, chopped green onions, sour cream, or pickled red onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the ground beef: Place a large skillet over medium-high heat. Add the ground beef and cook for 5-6 minutes, breaking it apart as it browns. Drain excess fat, leaving about 1 tablespoon in the pan.
  3. Add the aromatics: Reduce heat to medium. Add diced onion and cook for 3-4 minutes until soft and translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Season the beef: Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the beef mixture. Stir and cook for 1 minute to let the spices bloom.
  5. Add the chili: Pour the can of chili into the skillet and stir to combine. Let it simmer for 2-3 minutes until heated through.
  6. Prepare the cream cheese layer: In a small bowl, mix softened cream cheese and sour cream until smooth and spreadable.
  7. Layer the dip: Spread the cream cheese mixture evenly across the bottom of a 9×13-inch baking dish. Pour the chili-beef mixture over the top and spread gently.
  8. Add the cheese: Sprinkle shredded cheddar and Monterey Jack cheese evenly over the top.
  9. Bake: Place the dish in the preheated oven and bake for 15-18 minutes, or until the cheese is melted, bubbly, and starting to turn golden at the edges. For a browner top, broil for the last 1-2 minutes, watching closely.
