A crisp and flavorful autumn salad featuring candied pecans, fresh apples, dried cranberries, and a tangy maple vinaigrette. Perfect for fall gatherings or a quick, satisfying meal.

Ingredients

Scale
  • 1 cup pecan halves
  • 2 tablespoons maple syrup (for pecans)
  • 1 tablespoon unsalted butter
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt
  • 1/4 cup pure maple syrup (for dressing)
  • 3 tablespoons apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 1 small shallot, finely minced (about 1 tablespoon)
  • Salt and black pepper to taste
  • 6 cups mixed greens (baby spinach, arugula, romaine)
  • 2 medium apples (Honeycrisp or Fuji), thinly sliced
  • 1/2 cup dried cranberries
  • 1/3 cup crumbled feta cheese (optional)

Instructions

  1. Make the candied pecans: Place a large skillet over medium heat and melt the butter. Add pecan halves and stir to coat. Pour in 2 tablespoons maple syrup, sprinkle cinnamon and salt, and stir constantly for 3-4 minutes until glossy and caramelized. Transfer to parchment paper to cool completely.
  2. Make the maple vinaigrette: In a small jar, combine 1/4 cup maple syrup, apple cider vinegar, olive oil, Dijon mustard, and minced shallot. Shake vigorously for 20 seconds. Season with salt and pepper to taste. Set aside.
  3. Prep the apples: Wash apples, cut into quarters, remove core, and slice thinly (about 1/4 inch thick). If not serving immediately, toss with a little lemon juice to prevent browning.
  4. Assemble the salad: In a large bowl, add mixed greens. Layer apple slices on top, then sprinkle dried cranberries and crumbled feta (if using). Do not add candied pecans yet.
  5. Dress and serve: Shake dressing again, drizzle about half over the salad, and toss gently. Add more dressing as needed. Scatter candied pecans on top and serve immediately.

Notes

For best results, toast pecans before candying for extra flavor. Slice apples just before serving to prevent browning. Store components separately if making ahead; assemble and dress just before serving. The dressing improves after sitting for an hour.
