  • 1 cup BBQ sauce (recommend Sweet Baby Ray’s)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Wooden skewers or toothpicks
  • 2 cups fresh broccoli florets
  • 1 cup fresh spinach leaves
  • 1 cup fresh parsley sprigs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese, softened
  • 8 ounces salami slices, folded into triangles
  • 8 ounces pepperoni slices
  • 8 ounces provolone cheese, cut into small squares
  • 8 ounces cheddar cheese, cut into cubes
  • 4 ounces string cheese, cut into sticks
  • 1 cup cherry tomatoes
  • 1 cup cucumber slices
  • 1 cup baby carrots
  • 1/2 cup mixed olives
  • 1/2 cup pickles or pickle spears
  • 1/2 cup nuts (almonds or cashews)
  • 1 cup ranch dressing
  • 1 cup queso or cheese dip, warmed
  • 1/2 cup hummus (optional)

Instructions

  1. Cook the meatballs: Preheat oven to 400ยฐF (200ยฐC). Toss frozen meatballs with olive oil, garlic powder, and onion powder on a baking sheet. Bake for 12-15 minutes until heated through and slightly browned. Toss hot meatballs in BBQ sauce until fully coated. Set aside to cool slightly.
  2. Prepare the end zone cheese mixture: In a small bowl, combine shredded cheddar, shredded mozzarella, and softened cream cheese. Mix until well combined. Form into two small rectangular blocks, about 3×2 inches each. Refrigerate to firm up.
  3. Build the green field base: Arrange broccoli florets in a thick, even layer across the entire surface of a large rectangular board or baking sheet (at least 18×12 inches). Fill gaps with spinach leaves and parsley sprigs to create a dense, green base.
  4. Create the yard lines: Thread 2-3 BBQ-glazed meatballs onto each skewer. Place 8-10 skewers across the field at even intervals to create yard lines (e.g., at the 20-yard line, 40-yard line, etc.).
  5. Add the end zones: Place the cheese blocks at each end of the field, pressing gently into the green base. Optionally score small lines on top with a knife to resemble end zone stripes.
  6. Arrange the player roster: Along the sides of the field, arrange salami triangles, pepperoni slices, cheese cubes, and provolone squares. Group similar items together. Place string cheese sticks at the back of each end zone, cut in half lengthwise and arranged in a Y shape to look like goal posts.
  7. Fill the sidelines with snacks: Scatter cherry tomatoes, cucumber slices, baby carrots, olives, pickles, and nuts along the edges of the board in small clusters.
  8. Add the dips: Place small bowls of ranch dressing, warm queso, and hummus in the corners of the board or just off to the side.
  9. Final touches: Fill any empty spots with extra spinach or parsley. Ensure meatball yard lines are straight and evenly spaced. Add small flags or team decorations for extra flair if desired.

Notes

For best results, use firm, fresh broccoli for the green base. Warm the queso right before serving to avoid it solidifying. If making ahead, cook meatballs and prep veggies/cheese a day in advance; assemble board about an hour before serving, adding dips and warm items last. To transport, assemble on a rimmed baking sheet with high sides, cover loosely with plastic wrap, and transport flat in the car.
