  • 4 ripe avocados
  • 1/4 cup finely chopped red onion
  • 12 jalapeños, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 23 tablespoons fresh lime juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium Roma tomato, seeded and diced (optional)
  • 68 mini sweet bell peppers
  • 1 can (2.25 oz) sliced black olives
  • A handful of tortilla chips
  • Optional: a few small chive pieces or matchstick carrots

Instructions

  1. Prep the Pepper Cups: Wash and dry mini bell peppers. Cut off the top 1/2 inch from the stem. Scoop out seeds and ribs. On the front of each pepper, cut a small zigzag ‘Frankenstein mouth’ by scoring the skin. Set aside on paper towels.
  2. Make the Guacamole: Cut avocados in half, remove pits, and scoop flesh into a mixing bowl. Add lime juice and salt. Mash with a potato masher or fork until mostly smooth with some chunks. Fold in red onion, jalapeño, cilantro, and tomato (if using). Taste and adjust seasoning.
  3. Assemble the ‘Bolt’ Ears: Use a tiny bit of guacamole as ‘glue’ to stick two olive slices onto each side of the pepper cup near the top.
  4. Fill the Cups: Spoon guacamole into each pepper cup, mounding slightly above the rim. Smooth the top with the back of a spoon.
  5. Add the ‘Hair’: Gently press 3-4 sturdy tortilla chips into the top of the guacamole, fanning them out to look like messy hair.
