  • 10 oz bag of marshmallows (about 40 large or 4 cups mini)
  • 6 cups Rice Krispies cereal
  • 1/4 teaspoon salt (optional)
  • 1/2 cup semi-sweet chocolate chips
  • 1 teaspoon coconut oil or vegetable shortening (optional)

Instructions

  1. Grease a 9×13-inch baking dish and a large sheet of parchment paper with butter. Keep a small bowl of softened butter nearby for greasing hands.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter, swirling occasionally, about 2-3 minutes.
  3. Add the entire 10 oz bag of marshmallows to the melted butter. Stir constantly over low heat until completely melted and smooth, about 5-7 minutes.
  4. Sprinkle in 1/4 teaspoon salt (if using) and stir to combine.
  5. Remove the pan from heat. Pour in 6 cups of Rice Krispies cereal and fold gently until every piece is coated.
  6. Scrape the mixture into the greased baking dish. Use the buttered parchment paper to press it into an even layer without pressing too hard. Let cool at room temperature for about 10 minutes.
  7. Run a sharp knife around the edges of the pan to loosen the treats. Lift them out using the parchment sling and transfer to a cutting board. Cut into rectangles about 2 inches wide by 3 inches long (12-15 pieces).
  8. With slightly buttered hands, gently mold each rectangle into an oval football shape, tapering the ends slightly. Do not squeeze too hard.
  9. In a small microwave-safe bowl, combine 1/2 cup semi-sweet chocolate chips and 1 teaspoon coconut oil. Microwave in 20-second intervals, stirring between each, until fully melted and smooth (about 60-90 seconds total).
  10. Transfer the melted chocolate to a small zip-top bag. Snip off a tiny corner and drizzle thin lines across each football to form laces. Let the chocolate set at room temperature for about 10 minutes, or refrigerate for 5 minutes if in a hurry.

Notes

Don’t overheat the marshmallows or they will become hard. Use a light hand when shaping to keep the treats airy. Keep your hands buttered to prevent sticking. Let the chocolate set properly for the best shine and snap.
