These creamy slow cooker mashed potatoes with chives are the definition of a stress-free side dish. Set it and forget it for a silky, rich mash that’s perfect for holidays and potlucks.

Ingredients

Scale
  • 3 pounds russet potatoes, peeled and cut into 1-inch chunks
  • ½ cup (1 stick) unsalted butter, cut into pieces
  • 1 cup chicken or vegetable broth (low-sodium recommended)
  • ½ cup whole milk or heavy cream, warmed
  • 1 teaspoon salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ cup fresh chives, chopped
  • 2 cloves garlic, minced (optional)

Instructions

  1. Peel the potatoes and cut them into 1-inch chunks. Try to make them all roughly the same size so they cook evenly.
  2. Place the potato chunks in the slow cooker. Add the butter pieces, minced garlic (if using), 1 teaspoon of salt, and ½ teaspoon of black pepper. Pour the broth over everything. Do not stir yet.
  3. Cover the slow cooker and cook on LOW for 4 to 5 hours, or on HIGH for 2.5 to 3 hours, until the potatoes are fork-tender.
  4. About 10 minutes before the potatoes are done, warm the milk or cream in a small saucepan over low heat or in the microwave for 30 seconds.
  5. Once the potatoes are tender, turn off the slow cooker. Use a potato masher to mash the potatoes right in the slow cooker to your desired consistency.
  6. Pour the warm milk over the mashed potatoes and stir gently with a spatula until combined. Taste and adjust salt and pepper. Fold in the chopped chives, reserving a few for garnish.
  7. Switch the slow cooker to the ‘Warm’ setting. The potatoes will stay perfect for up to 2 hours. If they thicken up too much, stir in a splash of warm milk or broth before serving. Transfer to a serving bowl, garnish with remaining chives and a pat of butter, and serve immediately.

Notes

For best texture, cook on LOW. Do not over-mash or use a food processor. Potatoes can be made a day ahead and reheated. For dairy-free, use vegan butter and unsweetened oat milk.
