  • 1 cup (240g) Pumpkin Puree (100% pure, not pie filling)
  • 1 teaspoon Vanilla Extract
  • 1 cup (170g) Chocolate Chips (Semi-sweet or dark)
  • Optional: Chopped pecans or walnuts

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cardamom until no lumps remain.
  3. In a separate bowl, whisk melted butter, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla extract until smooth and creamy.
  4. Pour the wet mixture into the dry mixture. Gently fold together with a spatula until the flour just disappears. Do not overmix.
  5. Fold in the chocolate chips (and nuts if using).
  6. Let the batter rest for 10 minutes to allow flour hydration and leavening activation.
  7. Divide batter evenly among the 12 muffin cups, filling them almost to the top.
  8. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
